In this video I share how to make beet kvass for improved gut health. It’s a traditional Russian and Ukrainian probiotic drink that I often drink in a wine glass, with a meal or by itself.

RECIPE
3-beets washed and scrubbed (no peeling)
3.5 cups water
2 tablespoons goji berries
1/4 to 1/2 teaspoon sea salt

DIRECTIONS: In a half gallon jar add in all the ingredients, leaving 1 or 2 inches at the top of the jar. Place in a cool place and out of direct sunlight for at least 3 days and up to a couple weeks or longer. After a few days you can taste daily until the desired tartness is reached. Also on a daily basis I will agitate the jar so there’s no stagnation on the very top for mold to grow. After fermentation, harvest the kvass by straining and storing in a lidded glass jar in the refrigerator. It should last quite a while.
